All Managers, Chefs, and Sous Chefs are ServSafe certified by the American National Standards Institute and have successfully completed annual allergy awareness training through AllerTrain.
JOEL MEDINA, SOUS CHEF
Joel has been a Sous Chef with Cater to You since 2014. Born in Bayamon, Puerto Rico, Joel later moved to Brooklyn with his mother. As a young child Joel would watch his mother cook his favorite comfort foods such as arroz y gandules (rice with pigeon peas) and bistec encebollado (steak with onions). His mother’s ability to create amazing dishes from simple fresh ingredients inspired him to pursue a career in culinary arts.
Joel is a hospitality industry veteran of more than 20 years. He was previously a corporate trainer for Chili’s Grill & Bar and a cook for Feature Cuisine, an entertainment industry caterer. Joel enjoys working in the industry, not only for the cooking itself, but also the exciting, fast pace kitchen. Joel's specialty is Mediterranean style cooking, and he loves the rich flavors of Italian and Spanish dishes. His favorite dishes are spaghetti carbonara and chicken marsala, both of which he loves for their simplicity and bold fresh flavors.
Joel enjoys working with the dedicated team at Fordham. He also loves watching the students get excited about their lunch and enjoy it every day.
Joel has three sons that he loves spending his free time with when he is not at Fordham. They are athletic and enjoy playing all kinds of sports, camping, watching movies, and cooking.
Natasha Manigault, Store Manager
Natasha is the Retail Manager here at Fordham, and a member of Cater to You since 2011. Natasha’s cooking inspiration comes from her mother, who shared her southern upbringing with Natasha by teaching her how to prepare traditional Southern comfort foods like collard greens, fried chicken, and macaroni and cheese. Natasha began cooking at the age of seven. Her specialties are baked ziti and lasagna. Her favorite foods are West Indian classics, such as spicy jerk chicken and goat curry. She is a quick learner in the kitchen and great at multitasking.
Her favorite part about working at Fordham is serving the students and faculty while ensuring everyone is pleased with their service.
Natasha was born in Brooklyn and now resides in the Bronx with her two children, Damir and Deja.
